Located on the second floor in the old Hong Lim Market & Food Center in the Chinatown Area, Outram Park Fried Kway Teow Mee has carved a niche for itself in the world of Singaporean street food. This humble stall has gained quite a reputation for serving up a char kway teow like no other. As proof, the stall garners long queues that reaches a waiting time of around an hour that starts as early as 9am. Even longer during lunch hours where workers and tourists go on lunch breaks. A confirmation sign that the food is going to be great, right?
Charred, smokey, wok-hei filled, spicy, salty, creamy, and sweet are the myriad of flavors you will get for their char kway teow. Not bad for a plate that costs 4.00SGD. You can have an option for your plate to be spicier than the normal one. An additional for cockles can be arrange for 2.00SGD and 0.50SGD for an egg.
Verdict
What I enjoyed most about this specific char kway teow is their different cooking approach compared to other stalls. One, is that they use two kinds of noodles: the flat rice noodle and an egg noodle. Two, is that every noodle strand of their char kway teow is covered with egg providing that silky and creamy texture you will get in every bite.
Common char kway teows are mixed with cooked scrambled eggs along the way while you make the dish, but their method starts with the egg on a hot wok before the noodles are added. A style invented by Uncle Ng, the owner of the renowned stall. Uncle Ng also opted to use cockles instead of prawns which provides that freshness. It only takes around a minute for a plate to come out.
Did I mention they are a yearly regular on the Michelin Bib Gourmand Guide? For food enthusiasts and travelers, that is enough information to know that they take pride in their craft, and they are worth to try.
